TERROIR:
Riesling Schlossberg - An exceptional terroir: the Schlossberg hillside rests at an altitude of 200 to 300 meters on the migmatites of Kaysersberg and the intrusive granite of Thannenkirch, whose arenes constitute a terroir of excellent mineral fertility, coarse sand and clay to times.
The diversity of the minerals encountered (potassium, magnesium, fluorine, phosphorus) determine the finesse and the multiplicity of the aromas of its wines.
On a steep slope, the Schlossberg requires terrace cultivation.
VINIFICATION:
The extraction of the juice is done with the maximum care thanks to a pneumatic pressing. This slow pressing respects the grapes by avoiding the crushing of stalks and skins.
The fermentation of the musts starts spontaneously thanks to the indigenous yeasts present in the juice and generally lasts from 4 to 10 weeks. It takes place at a controlled temperature in stainless steel vats, to promote the expression of the typical aromas of the grape variety.
Aging on lees in lightning, 12 months.
Aging on lees adds fat to the wine. On the other hand, the oxygen which crosses the walls of the wood allows a slow oxidation of the wine, which promotes the development of its aromas.
The wine is then bottled, where it is aged for 2 to 3 years before being marketed.
Aging in the bottle is also involved in the evolution of the wine. Here, it is the opposite phenomenon of oxidation that occurs: reactions sheltered from the air develop the bouquet, while giving it more subtle nuances.

- Fruity, floral, ripe fruit, beautiful aromatic complexity, white flowers, density and freshness on the palate, some mineral notes, good aging potential.
